  • 4 small flour tortillas
  • 1 cup shredded cheese
  • 1 cup shredded chicken
  • La Mexicana Pico de Gallo
  • ¼ cup sour cream
  • 1 lime
  • cilantro
  • ¼ tsp smoked paprika
  • 2 tbsp butter

Directions

1. Make the Quesadillas

Heat 1 tbsp of butter in a non-stick skillet on medium heat and place two small tortillas in the pan. On one side of each tortilla, layer on some shredded cheese, shredded chicken, La Mexicana Pico De Gallo, and one more layer of shredded cheese. Gently fold the tortilla over and press so it flattens slightly. Cook on medium-high heat on each side or until golden brown and the cheese has melted. Repeat for all the tortillas.

2. Make the lime cream

Add sour cream, lime juice, lime zest, and smoked paprika to a small bowl, mix until combined.

3. Serve

Serve the mini Pico quesadillas with lime cream and more La Mexicana Pico De Gallo. Enjoy!
